BILLECART-SALMON

HISTORY OF
BILLECART-SALMON

Billecart-Salmon is a house of excellence in the Champagne region of France. Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon in the small village of Mareuil-sur-Aÿ, Billecart-Salmon has distinguished itself as one of the world's finest Champagne producers. Its reputation for excellence is well-deserved, as it is one of the few houses to continue to grow its own grapes on its own estate, rather than buying them from outside. This family-run house is one of the oldest in Champagne, and the current owners, François and Antoine Roland-Billecart, have carried on the tradition of excellence that their ancestors established centuries ago.

Billecart-Salmon 's philosophy is simple: create classic, elegant champagnes that express the terroir of their vineyards in Mareuil-sur-Aÿ. The house produces Brut and Rosé Champagnes, as well as vintage cuvées and Blanc des Blancs. Each cuvée is made from a blend of grapes from the family's vineyards, and is aged for at least three years before release. The house also produces a range of prestige cuvées, which are aged even longer.

The result of this dedication to quality is a range of Champagnes renowned for their finesse, complexity and elegance. Billecart-Salmon produces Champagnes that are both classic and modern, with aromas and flavors of ripe fruit, citrus, flowers and brioche. Its wines are renowned for their balance, finesse and length, and are perfect for any special occasion.

For over two centuries, Billecart-Salmon has been producing some of the world's finest champagnes. Its commitment to quality and craftsmanship is evident in every bottle, and its wines are a testament to the family's dedication and passion Billecart-Salmon. From its humble beginnings in Mareuil-sur-Aÿ, Billecart-Salmon has become one of the most respected names in Champagne, and its wines are a celebration of the region's unique terroir.

Fantastic acres

The House's champagne is based, above all, on the unique expertise of its men, who meticulously tend a 100-hectare estate and source grapes from a total of 300 hectares in 40 Champagne crus.

Most of the grapes used for vinification come from within a 20 km radius of Epernay, where the great Pinot Noir, Chardonnay and Meunier crus coexist in the Montagne de Reims, Côte des Blancs and Vallée de la Marne regions.

The advantages

THE Billecart Salmon HOUSE

It all began here in 1818, when Nicolas François Billecart and Elisabeth Salmon joined forces to create their Champagne House. A family affair, since Louis Salmon, Elisabeth's brother and a passionate oenologist, was involved in making the wines.

And so, for 7 generations, each member of the family has endeavored to perpetuate the family tradition, remaining faithful to an immutable oath: "to privilege quality, to aim for excellence".

La clos Saint-Hilaire

La clos Saint-Hilaire

This parcel of vines is managed and cared for with remarkable respect for the environment. La Maison Billecart-Salmon has decided to return to ancestral methods by reintroducing draught horses and sheep. The latter improve the porosity and biodiversity of the soil: roots grow deeper and the minerals extracted from the soil encourage the growth of smaller, more concentrated grapes, ensuring the best expression of this unique terroir.

Clos Saint-Hilaire gives birth to an exceptional eponymous champagne named after the patron saint of Mareuil-sur-Aÿ. Made exclusively from Pinot Noir grapes vinified in barrel, it develops a rare complexity and astonishing freshness. Each vintage will comprise no more than 3,500 to 6,500 bottles, all numbered.

LA CUVERIE

Billecart Salmon
LA CUVERIE

Always keen to improve the quality of its wines, in the 1950s the company introduced the cold settling technique, followed by the use of stainless steel vats for longer fermentation at low temperature. The winery is concentrated mainly on small, temperature-controlled vats (47 hectolitres), which ensure traceability of grape varieties and plots.

This vinification, cru by cru and grape by grape, preserves all the nuances of terroir expression. By vinifying at low temperature, the fermentation process is slowed down, favoring airy, delicate aromas and letting all the purity of the fruit express itself. The true signature of the Billecart-Salmon style.

LES CHAIS

LES CHAIS

More than 400 casks and 24 tuns occupy the Maison's 2 cellars.

Each barrel has been scrupulously selected and shaped to reveal the full richness and aromatic complexity of the wines. True to its style and know-how, the House vinifies at low temperature to preserve all the freshness and elegance characteristic of its champagnes. Each parcel is vinified individually, to ensure constant traceability. This know-how and ancestral vinification method combine with tank vinification to bring out all the elegance of the Billecart style.

THE CAVES

Non-vintage champagnes can be enjoyed for 3 to 4 years, twice as long as the rule set by the appellation, while vintage cuvées wait ten years before revealing their full maturity. Allowing time to do its work is the nobility of champagne Billecart-Salmon.
