Fantastic acres
The House's champagne is based, above all, on the unique know-how of its men who rigorously care for a 100-hectare estate and source their grapes from a total of 300 hectares in 40 Champagne crus.
Most of the grapes used for the vinification come from a radius of 20 km around Epernay, where the great vintages of Pinot Noir, Chardonnay and Meunier coexist in the lands of the Montagne de Reims, the Côte des Blancs and the Vallée de la Marne.
THE HOUSE
It all started here in 1818, when Nicolas François Billecart and Elisabeth Salmon joined forces to create their Champagne House. A family story since Louis Salmon, Elisabeth's brother and passionate about oenology, was involved in the making of the wines.
Thus, for 7 generations, each member of the family has been committed to perpetuating the family tradition by remaining faithful to an unchanging oath: "to privilege quality, to aim for excellence".
La clos Saint-Hilaire
This parcel is led by a conduct and a remarkable maintenance of the vine in the respect of the environment. The House Billecart-Salmon has decided to return to ancestral methods by reintroducing the draft horse and sheep. The latter improve the porosity and biodiversity of the soil: the roots develop in depth and the minerals extracted from the soil favor the growth of smaller and more concentrated grapes, ensuring the best expression of this unique terroir.
The Clos Saint-Hilaire gives birth to an exceptional eponymous champagne named after the patron saint of Mareuil-sur-Aÿ. Made exclusively from Pinot Noir grapes vinified in barrels, it develops a rare complexity and an astonishing freshness. Each vintage will contain no more than 3500 to 6500 bottles, all numbered.
LA CUVERIE
Always concerned with improving the quality of the wines, the company introduced the cold settling technique in the 1950s, followed by the use of stainless steel vats for a longer fermentation at low temperature. The winery is mainly concentrated in small temperature-controlled vats (47 hectoliters) which allow us to respect the traceability of the grape varieties and the parcels.
This vinification, vintage by vintage and variety by variety, allows us to preserve all the nuances of the terroir's expression. By vinifying at low temperature, the fermentation process is slowed down, favoring airy, delicate aromas and letting all the purity of the fruit express itself. THE CHAIRS
More than 400 barrels and 24 tuns occupy the 2 cellars of the House.
Each barrel has been scrupulously chosen and shaped to reveal all the richness and aromatic complexity of the wines. Faithful to its style and know-how, the House vinifies at low temperature to keep all the freshness and elegance characteristic of its champagnes. In a permanent concern of traceability, each parcel is vinified individually. This know-how and this ancestral method of vinification come together with the vinification in vats to exalt all the elegance of the Billecart style.

THE CAVES
The chalk cellars dating from the 17th and 19th centuries watch over the precious nectars of the House. With time, the wines assert themselves and the aromas exalt themselves, imbued with all the finesse, balance and elegance that characterize the House's champagnes.
