A look at the 2013 vintage reveals its genesis. The rather rainy autumn of 2012 contributed to the preservation of foliage and good wood storage. The rains provided satisfactory water levels in the soils before winter, which was fairly cold and dry, 2.3° degrees below the ten-year average. Spring remained cool, but with no frosts to damage the vines, which only began to bud at the end of April. Persistent cold and a damp atmosphere maintained this delay. Fortunately, the summer went well and the vines reached full bloom at the end of July. The summer was hot and dry, but also stormy at times. The vines didn't catch up and ripened rather slowly. This made the harvest more difficult, as the weather deteriorated in the autumn. The harvest began between September 24 and October 9, depending on the crus, and ended on October 20. The Chardonnays, picked first, were the great beneficiaries of the Indian summer that marked the start of the harvest.


This wine, made exclusively from the Chardonnay grape, was once known as the "lace" of Champagne because of its fine, persistent white mousse. The first press of Chardonnay comes exclusively from the Grands Crus in the heart of the renowned Côte des Blancs. In addition, reserve wines, 25 vintages blended since 1985, can account for up to 50%. The winemaking method is very old-fashioned, and involves less powerful fermentation in the bottle than for a classic champagne. The wine is aged for 4 years on its lees, followed by a minimum of 10 months after disgorgement. The sugar concentration is Extra-Brut (less than 6g/L).
The Blanc de Noirs Grand Cru Multi-Millésimes from Bruno Paillard is the result of a desire to offer a rich, precise expression of Pinot Noir from the northern Grands Crus of Champagne. Made exclusively from first pressings of Pinot Noir from Verzenay, Mailly, Verzy and Bouzy, 3 of which have a more northerly orientation, these traditional chalky terroirs provide remarkable elegance and depth. Part of the fermentation is carried out in wood (15-20% depending on the year), and the wine is then aged on its lees for 3 years before disgorgement, the date of which is indicated on the back label. After this, Blanc de Noirs Grand Cru rests in the cellar for a minimum of 6 months, as do all Bruno Paillard Champagnes, which are Extra-Bruts, dosed at 3g/L.


Rosé Première Cuvée honors the unique finesse of Pinot Noir and bears the name of the single press it is made from. A secret combination of Pinot Noir and Chardonnay is used, and the Pinot Noir is presented in its two forms: White and Red. 25 vintages have been blended since 1985, up to 50%, and the wine is then aged for 3 years on lees and a further 5 months after disgorgement. The dosage is Extra-Brut (less than 6 g/L), for a very pure flavor.

The House Bruno Paillard offers its signature Première Cuvée Extra Brut, which is its own interpretation of the region. It results from the selection of over 30 crus from the noblest terroirs of Champagne, whose composition remains a secret. 22% Pinot Meunier, 33% Chardonnay and 45% Pinot Noir, part of which (20%) undergoes its first fermentation in barrel. A blend of 25 cuvées assembled since 1985, up to 50%, and long cellar ageing (3 years on lees and 5 months after disgorgement). The Extra-Brut (less than 6g/L) makes this cuvée authentic and pure.


EASE AND GENORISITY
Cuvée 72 is the result of a long, complex 36+36-month maturation process. It is composed of over 30 secretly blended crus, 20% of which undergo initial fermentation in barrel. After ageing on lees for 36 months, the cuvée undergoes a further 36 months of maturation. After 72 months, it reveals aromas of fruit, flowers and spices, with occasional hints of toast, while remaining true to its original straightforwardness.
A symbol of truth and calm, this champagne escapes the difficulties associated with its terroir, provided you're patient... The first press selection of the three grape varieties is, for the most part, vinified in small oak barrels, and the blend is mainly composed of terroirs from the northern Montagne de Reims and the first few kilometers on the right bank of the Marne Valley for the Pinot Meunier (50%), then Chardonnay and Pinot Noir make up equal proportions. Rare in Champagne, reserve wines account for half the blend. Maturation lasts 3 to 4 years on the lees, and a further 6 months after disgorgement. Dosage: zero.
