Terroirs

Bethon - Côte de Sézanne

A terroir rich in chalky soil, with great minerality. Light sun exposure, mostly at the end of the day.

This is an excellent terroir for wines of this blend, with a high proportion of Pinot Noir and Chardonnay.

About this house

"As winegrowers and Champagne producers for 3 generations, we are committed to carrying out all the stages of our winemaking ourselves. Our vineyards are located on three distinct terroirs, which is a real opportunity to obtain different wines and therefore a wider choice of blends. The winery is located in Bethon, where we have our presses, our vat room and our champagnes in the aging process."

Dishes

Pairing this champagne with a citrus bar dish is an excellent idea.

Chef's word

Chef Philippe Vazart serves it with Escalope de Foie Gras de Canard Poêlée aux Asperges de Val de Vesle.

It is also paired with Suprême de Turbo Grillé, and its small Ratatouille and Feta cheese.

A soft cheese such as Brie au Truffes is perfect.
