Tasting

Bright gold color with shimmering highlights. Fine, dynamic effervescence prolonged by a very persistent cordon.

Immediate bouquet, both full-bodied and fresh. A basket of ripe but delicate fruit, with the Pinot Noir's yellow fruit (mirabelle plum) and the Chardonnay's sweet citrus (lemon tart) and delicate white flower (jasmine) aromas. After a few minutes, autolysis notes appear in the form of smoke and lightly toasted viennoiserie.

Dense and deep on the palate, with a rich, structured structure. The texture is captivating, as the fleshy substance of the Pinot Noir de la Montagne ripples through the mouth and is prolonged by an immense saline freshness and a hint of bitterness. A simultaneous impression of the strength, richness and power of masterfully mature Pinots Noirs, deliciously balanced by the limestone freshness and density of the Chardonnays that dominate this blend. The warm, gourmand style of Collection is there, thanks to the great ripeness of the most recent harvest: 2018. But the freshness, energy and complexity of the Réserve Perpétuelle created in 2012, and the woody grain of the Réserves Foudres, stretch and lengthen the material to give it finesse and persistence!

"Witnessing the soul of Champagne isn't just about cooking the terroir... it's about understanding who it is!

Having worked in the kitchens of Messrs Bordier, Grondart, Anton and Roth, and as Yannick Alléno's right-hand man at Le Scribe and then Le Meurice, he brought Domaine Les Crayères its first macaron in 2011, followed by a second in 2012, which he has kept for over 10 years.

His menu is inspired by the seasons and the Champagne region.
