Aromatic profile

The structure of this champagne

Four dimensions to capture its balance
Freshness
Vivid and calcareous — the unmistakable signature of Le Mesnil-sur-Oger's deep chalky soils.
Roundness
An extra-brut dosage (3 g/L) that preserves tension at the expense of any opulence.
Depth
A pronounced vinosity built by six to seven years on lees and the concentration of 40-year-old vines.
Length
A saline, lingering finish — the hallmark of the great terroirs of the Côte des Blancs.

TASTING NOTES

Pale gold in colour with crystalline highlights. The nose is delicate and precise: fresh chalk, white blossom, lemon zest and a gentle brioche note from the extended ageing on lees. The palate shows exceptional purity — mineral, taut and laser-focused, with a persistent saline finish that reveals all the nobility of the Grand Cru terroirs of Le Mesnil-sur-Oger.

Terroirs

Sourced from Grand Cru parcels in the villages of Le Mesnil-sur-Oger and Oger (Côte des Blancs), on deep chalky soils, including the historic lieux-dits « Champ de Tir », « Le Puits des Gaumes » and « Chetillons ». Vines average 40 years of age; the wines are aged 6 to 7 years on lees before disgorgement.

Cazals

About this house

Maison Claude Cazals has been established at the heart of the Grand Cru village of Le Mesnil-sur-Oger since 1897, when Ernest Cazals, a cooper by trade, settled in this legendary corner of the Côte des Blancs. His grandson Claude lent his name to the house and secured his place in Champagne history by inventing the gyropalette, revolutionising the traditional riddling process.

Since 1996, Delphine Cazals has carried forward this exacting family legacy across 9 hectares classified entirely as Grand Cru and Premier Cru between Oger and Le Mesnil-sur-Oger. The estate is home to one of Champagne's rare walled enclosures — the Clos Cazals (3.7 ha), planted in 1947 by Delphine's grandfather Olivier, within a residence that once belonged to Léon Bourgeois, Nobel Peace Prize laureate in 1920.

Aperitif
