Rosé champagne is produced in two ways. The most common method, known as ‘assemblage’, involves adding 5 to 20 per cent of red Champagne to a clear white wine before the second fermentation begins — a method that ensures consistent colour and style from one year to the next. The second method, ‘rosé de saignée’, colours the juice through maceration of the skins.
