TASTING NOTES
Golden yellow robe with green highlights and a fine, persistent crown attesting to a delicate effervescence. The nose opens on notes of candied lemon, white blossom and fresh almond, underpinned by a subtle chalky minerality. On the palate, the attack is lively and taut, the texture creamy, and the finish long and saline — of the purest Champenois character.
The composition

Terroirs
Sourced exclusively from the Saint-Thierry massif, to the north-west of Reims, on clay-limestone soils that lend the Chardonnay a distinctive freshness and minerality. The 2015 vintage, sun-drenched and late-ripening, delivered remarkable concentration whilst preserving the grape's natural acidity.
About this house
Champagne Lemaire Père et Fils is a family house founded in 1885 in the Saint-Thierry massif, west of Reims, and has been run since 1993 by brothers Nicolas and Antoine Lemaire. Across 14 hectares certified HVE, they tend their vines with deep respect for the clay-limestone terroir of this northern massif — one too often overlooked.
Their winemaking philosophy centres on preserving primary aromas — vinification without malolactic fermentation — and low dosage, so as to reveal the authentic character of each cuvée. Regularly acclaimed by the Guide Hachette des Vins, their Blanc de Blancs offer a precise expression of Saint-Thierry's mineral character and singular freshness.
The perfect pairing
Aperitif
Light, yielding gougères are a perfect match for the vivacity and fine bubbles of this Blanc de Blancs.
Starter
Oysters, with their briny, iodine-tinged salinity, find a natural and precise counterpart in the chalky minerality of this cuvée.
Main course
Sole meunière, delicate and buttery, is lifted beautifully by the citrus tension and persistent minerality of this 2015 vintage.
