Terroirs

A Blanc de Noirs from Pinot Noir grown on 40 to 50-year-old vines, in the lieux-dits « Le Champ Janvrai » and « La Fleuranne », on the chalk soils of the Premier Cru of Trépail in the Montagne de Reims. Vinified in old barrels, exclusively with indigenous yeasts, with no dosage added.

David Léclapart

About this house

David Léclapart, grower in Trépail (Premier Cru, Montagne de Reims), tends 3 hectares of vines across 22 plots according to biodynamic principles (Demeter certified). The heir to a family tradition, he crafts terroir-driven Champagnes of absolute purity: spontaneous fermentations with indigenous yeasts, no fining or filtration, and sulphur kept to a strict minimum.

Each cuvée bears an evocative name — L'Artiste, L'Amateur, L'Astre — alongside an LV code (Lot de Vendange) that precisely traces the vintage. His approach, blending biodynamic rigour with an artistic sensibility, has established David Léclapart as one of the world's foremost references in grower Champagne.

Aperitif

Aperitif

The fine bubbles and mineral tension of L'Astre are a sublime match for the airy lightness of cheese gougères.

The wine's notes of citrus and ginger resonate beautifully with the zests and fresh herbs of gravlax.

Main course

Main course

The depth and spiced character of the Pinot Noir find a natural echo in the umami intensity of a morel mushroom risotto.
