Terroirs

Sourced from the eponymous lieu-dit in Damery (Vallée de la Marne), this rosé undergoes 36 hours of maceration in terracotta amphora, expressing the unique potential of old-vine, mass selection vines planted in 1982 on the south-facing slopes of the commune.

Maurice Choppin

About this house

Established in Damery for seven generations (1712), Maison Maurice Choppin is today led by Benjamin Choppin, a récoltant-manipulant working the terroirs of the Vallée de la Marne. The domaine has held Haute Valeur Environnementale (HVE) certification since 2018 and farms its vines using reasoned viticulture with a clear leaning towards organic practices.

Benjamin Choppin champions an uncompromising, natural approach: spontaneous fermentation with indigenous yeasts, ageing in 225 L oak barrels and terracotta amphoras, with no filtration or fining. Each parcel is vinified separately to reveal its own identity, in a spirit of total terroir transparency.

Food pairing

The perfect pairing

Between the champagne and its dish
Aperitif

Aperitif

Its extra-brut vivacity and red fruit character make this an elegant aperitif champagne, perfect alongside warm cheese bites.

Starter

The sharp acidity and light tannic structure of the rosé Meunier beautifully complement the freshness of a citrus-cured salmon tartare.

Main course

Main course

The depth of this old-vine Meunier holds its own against the richness of duck breast and the gentle heat of oriental spices.
