The Ayala range is centred around four signature cuvées. The Brut Majeur, a blend dominated by Chardonnay, pairs beautifully with aperitifs, oysters and shellfish. The Rosé Majeur, elegant and fruity, goes well with roast poultry or salmon tartare. The Brut Nature, with no added sugar, brings out the best in sashimi and fresh soft-textured cheeses. The House was founded in 1860 in Aÿ, a Grand Cru village in the heart of Champagne. As early as 1882, it was counted amongst the founding members of the Syndicat des Grandes Marques, a testament to its status amongst the Champagne elite.
