The Mademoiselle Marg'O range comprises four extra brut wines with low dosage. La Dame Noire Extra Brut, the house’s prestige cuvée, reveals a deep, briny structure: perfect with pan-fried scallops or roast poultry with fine herbs. Pure Blanc de Blancs, with its distinct Kimmeridgian minerality, shines as an aperitif or with fine ‘de claire’ oysters. Mademoiselle Marg'O — Women Winemakers of the Côte des Bars
It was in 2022 thatAurélie and Sonia founded Mademoiselle Marg’O — a name paying homage to the first name Margaux, chosen as a symbol of elegance and confident femininity. As heirs to a family estate in the Côte des Bars, they decided to write their own chapter and showcase the unique character of their Kimmeridgian soils: a clay-limestone substrate unlike any other in Champagne, which gives the Chardonnay a distinct minerality and a crisp acidity that are uncommon in this predominantly Pinot Noir region.
The grapes are harvested by hand at perfect ripeness, with each grape variety pressed separately using a slow and gradual process. Vinification takes place in temperature-controlled stainless-steel vats, followed by a long period of ageing in the cellar — ensuring the aromatic integrity and velvety texture characteristic of each of the estate’s cuvées.
