Aromatic profile

The structure of this champagne

Four dimensions to capture its balance
Freshness
A lively, incisive acidity, heightened by the complete absence of malolactic fermentation.
Roundness
The ripeness of the Grand Cru Pinot Noir brings a generous texture, tempered by the extra-brut dosage.
Power
The power here is that of Verzenay's northerly terroir, expressed with precision and minerality.
Length
A saline, nutty finish of fine persistence, with an amplitude that suggests excellent ageing potential.

TASTING NOTES

A pale gold robe with the faintest blush, threaded with exceptionally fine bubbles. On the nose, candied citrus, delicate florality and a whisper of oak from the Verzy forest speak to a masterful vinification; small red fruits complete the aromatic palette. On the palate, the texture is generous and well-proportioned, anchored in finesse rather than showmanship, with a hazelnut note that lengthens and deepens the finish.

Terroirs

The Les Perthois plot sits on the north-facing slopes of the Grand Cru of Verzenay (Montagne de Reims). Its deep clay-limestone soils yield Pinot Noirs of remarkable minerality — a true expression of Champagne's chalky subsoil.

Péhu Simonet

About this house

Domaine Péhu Simonet is a 7.5-hectare family estate based in Verzenay, run since 1988 by David Pehu — the fourth generation of a winegrowing dynasty whose first commercial harvests date to the early twentieth century under the Veuve Pehu label. The union of Charles Pehu and Marie-Claire Simonet gave the present estate its name.

Since 2021, the estate has held organic certification. David Pehu practises holistic viticulture: horse-drawn ploughing on 50% of the plots, sheep grazing as winter ground cover, and hedgerows and trees bordering the vines to encourage biodiversity. In the cellar, malolactic fermentation is systematically blocked, and a portion of the wines are vinified in barrels sourced from the Verzy forest, lending a wood-derived complexity of the utmost discretion.
