The composition

Terroirs
A blend of all three Champagne varieties: 43% Chardonnay from the Grands Crus of the Côte des Blancs, 28% Pinot Noir from the Grands and Premiers Crus of the Montagne de Reims, Aÿ and Mareuil-sur-Aÿ, and 29% Pinot Meunier from the Vallée de la Marne. The cuvée incorporates reserve wines, the oldest of which date back to 2006.

Founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and Élisabeth Salmon, Billecart-Salmon is one of the rare grandes maisons to have remained both independent and family-owned across seven generations. Its distinctive style is built on a double cold-settling process and an uncompromising rigour in the selection of terroirs.
A specialist in precision and elegance, Billecart-Salmon presents Le Sous-bois as a character-driven cuvée vinified entirely in 15-year-old seasoned oak barrels — a testament to the house's mastery of oxidative ageing in the service of complexity and texture.
