The composition

Terroirs
A blend dominated 95% by the clay-chalk soils of Montgueux (Aube, Troyes region), complemented by 5% from the grand chalky terroir of Le Mesnil-sur-Oger. Vines of around thirty years old, harvested by hand.
About this house
Founded in the early twentieth century at Le Mesnil-sur-Oger by Charles Gonet, the house came into its own under Vincent Gonet and Davy Sulcova, who gave it its dual identity in Épernay in 1985. They broke with tradition by entrusting Davy Sulcova with the avant-garde bottle design that has since become the house's visual signature.
Today, under the stewardship of Karla and Yan-Alexandre, the third generation, the estate farms 20 hectares across the Côte des Blancs and Montgueux. The philosophy remains unchanged: minimal dosage to let the terroir speak freely, and the right to withhold any cuvée that falls short of their standards. Certified HVE and Viticulture Durable en Champagne.

Main course
A classic and elegant pairing between the refined acidity of Chardonnay and the nutty brown butter of a Dover sole.
