Cuvée Les Hauts d'Épernay 2018, created by Philippe Lancelot, is a remarkably harmonious champagne. This cuvée can be enjoyed both as an aperitif and with fish or shellfish.
The chiseled, chalky texture announced on the nose is present. The attack is striking and salivating, where the salinity and delicacy of the fruit intermingle in an umami that calls to the plate. The depth of this Champagne gradually emerges, around notes of cherry flesh, kumquat and quince. Good length, testifying to this wine's great loyalty to its terroirs of origin.
Their Epernay terroirs are mainly located on the upper slopes.
The aim is to understand and bring out the essence of each grape variety, and to create unique cuvées with their own identity, year after year, according to my whims and imagination. Purity, singularity and originality are my main wishes, hence the idea of "parcels and coups de cœur"
To ensure that customers leave the restaurant with a sense of satisfaction on every visit, Nacho Chicharro and Dani Garrido, executive chefs at Mano de Santa, have created a gastronomic proposal based on world cuisine.
