Terroir-Champagne-Ruinart

Terroirs

The Montagne de Reims

The Dom Pérignon House, named after the monk Dom Pierre Pérignon, has been pursuing the quest for "excellence and harmony" in its champagnes for almost fifty years, now under the direction of Vincent Chaperon. Produced exclusively from grapes grown on the finest terroirs in the Champagne region, with meticulous, sustainable viticulture, this vintage benefits from a cool spring followed by a cloudy summer, before sunshine and winds in September that ensure beautiful berry ripeness. Composed of Chardonnay and Pinot Noir, it embodies the balance and finesse characteristic of Dom Pérignon.

About this house

In 1668, the young Benedictine monk Dom Pierre Pérignon was appointed procurator of the Abbey of Hautvillers, high up in the Champagne region.
Having succeeded in transforming wine into champagne, he has since embodied the original and mystical character of champagne creation.

Dom Pérignon is driven by an unwavering commitment: each vintage reflects the uniqueness of its year.
With each vintage, Dom Pérignon tirelessly pursues a profound aesthetic ideal: to create and reveal the harmony of a constantly evolving nature.

Inputs

Pair this Dom Pérignon with a poultry starter such as roast guinea fowl served with crispy skin and a coffee-yuzu sauce

champagne dessert

Dessert

For dessert, pair this champagne with the lightness and sweetness of fruit, such as a plum tart with custard.

Chef's word

Chef Marco Fadiga prepares a carpaccio of prawns to accompany this romantic, graceful, very long and, above all, legible champagne.

It's a racy champagne that's already a pleasure to drink as an appetizer.
