THE CUVÉES OF MAISON POL ROGER
Pale gold in colour with silver highlights, fine and persistent bubbles forming a cordon of exceptional elegance. The nose is open and complex: dried fruits, cocoa, sweet almond and coconut, giving way to Mirabelle plum and eau-de-vie nuances on aeration. On the palate, freshness takes centre stage, underpinned by precise acidity and a fleshy Pinot Noir; aromas of lemon, bitter orange and dried cherry lead to a saline, mineral finish over candied orange zest.

A blend of 20 Grands and Premiers Crus, drawing on the Montagne de Reims for Pinot Noir and the Côte des Blancs for Chardonnay, aged for 5.5 years on lees in cellars 33 metres beneath Épernay — ensuring a slow maturation at a constant temperature of 9 °C.
Founded in 1849 by Pol Roger in Épernay, the House has remained independent and family-owned across six generations. Its style — celebrated for its elegance and precision — earned the unwavering loyalty of Winston Churchill, who consumed several hundred bottles of his favourite cuvée each year; on his death in 1965, the House paid tribute by bordering its labels with black.
Pol Roger stands among the rare great Houses to control every stage of its production, from the vineyards to the chalk-hewn cellars. At 33 metres depth, those cellars maintain a constant, ideal temperature for the slow development of the aromatic complexity that is the signature of Champagne Pol Roger.
Its fine bubble and lively attack transform these small cheese gougères into a refined and memorable opening act.
The citrus notes and saline freshness of the Vintage 2016 echo the lemon marinade of gravlax, creating a brilliantly harmonious match.
The complexity of Pinot Noir aged on lees — cocoa, plum, candied orange — enters into dialogue with the earthy, woodland aromas of morels in this silky risotto.
