Champagne Note 94

The Structure

Discover the structure of this Champagne

Freshness

Harmonious balance between the various components of acidity.

Roundness

Supple, easy-drinking champagne , the acidity doesn't clash in the mouth.

Power

Generous champagne with great intensity.

Long on the palate

Champagne aromas linger on the palate.

Tasting

The color is a crystalline pale yellow, punctuated by a very fine effervescence that expresses itself through a delicate, very elegant string of bubbles.

The first nose, full of subtlety, is a little closed. It gradually opens up to notes of fresh fruit, exotic fruit (notably pineapple) and white peach. The evolution is very discreet, barely perceptible. On aeration, notes of fresh butter and custard emerge, waiting to blossom.

The palate is round and full-bodied, with a lovely aromatic freshness. The fullness and length typical of a vintage wine from the House are also present.

Terroirs

Pol Roger's 2018 Brut Millésimé cuvée is made exclusively from grapes from Grands and Premiers Crus of the Montagne de Reims and Côte des Blancs regions, in the strict tradition of the House. With a carefully balanced blend of 60% Pinot Noir and 40% Chardonnay, it is produced only during the best vintages.

After delicate pressing and settling (including cold settling), each parcel is vinified separately in thermo-regulated stainless steel tanks, followed by full malolactic fermentation. Aging continues in Épernay's deep cellars (33 m below ground), where the bottles mature slowly, before being stirred by hand using the traditional method.

The finesse and minerality of the champagne support the vegetal character of the asparagus, while enhancing the gourmandise of the risotto.
