The Structure
Discover the structure of this Champagne
Freshness
Harmonious balance between the various components of acidity.
Roundness
Supple, easy-drinking champagne, the acidity doesn't clash with the palate.
Power
Generous champagne with great intensity.
Long on the palate
Champagne aromas linger on the palate.
Tasting
Coppery and bluish highlights give rise to fine, rose-quartz-colored bubbles.
Spring flowers, tangerine, lychee and verbena alternate with accents of elderberry and sweet almond. Enhanced by black fruits (blackcurrant, blueberry, cranberry), the nose is enveloping, foreshadowing remarkable potential.
The vitality of black and red fruit and citrus is matched by notes of smoke, star anise and violet. The wine's precise grace then unfolds with a hint of vanilla.
Terroirs
Montagne de Reims
Rare Champagne breaks codes by choosing chardonnays from the Montagne de Reims, essentially known for pinot noir, which bring an incredible, precise minerality.
It also favors Montagne de Reims Pinot Noirs, rich in velvety intensity and pure, silky texture.
About this house
To mark the centenary of the presentation of Piper-Heidsieck 's first prestige cuvée to Queen Marie-Antoinette, a limited series of bottles was produced in 1885: the Cuvée du Centenaire. Pierre-Karl Fabergé, jeweler to Tsar Alexander III, designed the spectacular enamel decoration.
Unfortunately, the techniques of the time did not allow it to be executed, as the glass in the bottles was too fragile. A label faithfully reproducing the design was affixed to the bottles of this exclusive edition. This centenary cuvée foreshadows Rare Champagne.
Inputs
This champagne is the perfect accompaniment to a shellfish starter such as shrimp risotto or langoustine ceviche with radish. Our favorite: pair with a Mozzarella di bufala.
Dishes
This Rare Rosé Millésime 2008 is excellent with braised or grilled red meat such as Black Angus or pigeon casserole.
Desserts
For dessert, pair this Rosé 2008 with fruit desserts such as frosted lychees and rose marzipan.
Chef's word

The Chef has imagined his perfect match: golden caviar and zucchini to accompany the Rare Millésime 2008 vintage.
