Clos de Cumières is a historic vineyard, dating back to the 18th and 19th centuries, and is probably one of the oldest Clos in Champagne. It covers 0.54 hectares and was planted in 1964 and 1965 with a massal selection of Chardonnay and Pinot Noir.
In 2011, Hervé and Yann Jestin bought the vineyard and 2012 marks the first vintage under their ownership. Currently, 12 harvests are maturing in the cellars. The grapes are harvested on fruit days, which is a common biodynamic practice to enhance the quality of the fruit.

the structure of this Champagne
Along with the other cuvée from Champagne Jestin this is a rare and exceptional champagne.
Gorgeous nose, with lots of toasted brioche (almost smoky), ripe citrus, berry notes and maybe even watermelon rind, a little ginger and pie spice also come up.
The palate offers a creamy mousse and layered fruit concentration culminating on a long saline finish. A truly captivating wine.

Grape origin
Clos de Cumières: 50% Pinot Noirs and 50% Chardonnay. Clos de Cumières is a very old building, dating from the 18th and 19th centuries, and probably one of the oldest clos de Champagne. 2012 is the first vintage following the purchase by Hervé and Yann JESTIN in 2011. 12 harvests are currently maturing in the cellars.
The grapes are harvested on fruit days. 2012 is the first year of conversion to organic farming.
Alcoholic fermentation
Made with indigenous yeasts, in French oak barrels from the Allier forests, without temperature control (22 to 24°C).
Malolactic fermentation and ageing Carried out by indigenous bacteria during the 10-month ageing period on lees. No racking is carried out during this period.
Champagne Jestin, founded in 2006 by Hervé Jestin, is a pioneer and world-renowned expert in organic and biodynamic viticulture. He divides his time between advising prestigious estates in France and abroad, and making his own champagnes.
In collaboration with David Léclapart and Vincent Laval, Hervé Jestin produces an elegant champagne cuvée of inestimable length. The wines are organic and certified biodynamic.
