The range comprises four Grand Cru wines. The RSRV Blanc de Blancs (100 per cent Chardonnay from Cramant) expresses the chalky minerality of the Côte des Blancs — perfect as an aperitif or with oysters and fine fish. The RSRV Blanc de Noirs, made from 100% Pinot Noir from Verzenay (aged for a minimum of 6 years), reveals power and complexity when paired with roast poultry or mature cheese. The RSRV Rosé Foujita (a tribute to the painter Foujita, a blend of six Grands Crus) offers a generous palate, ideal with red fruit desserts or fine charcuterie. The RSRV Cuvée 4.5 — 60 per cent Pinot Noir, 40 per cent Chardonnay, 5 Grands Crus, aged for at least 4 years — pairs superbly with sweetbreads, fish in sauce and full-flavoured cheeses.
RSRV champagnes should be served at between 8 and 10 °C in a tulip or Burgundy-style glass, which allows the bouquet to express itself fully. The Cuvée 4.5 reaches its peak within 4 to 6 years of purchase; the vintage Blanc de Noirs can improve further for a further 2 to 4 years in a cool cellar, away from light.
