Louis Roederer Blanc de Blancs 2016 Vintage champagne is is grown on hillside plots in the Avize terroir in the heart of the “La Côte” estate. This champagne draws its strength from the intense chalkiness of these limestone soils which lend it its infinite freshness. With time, this champagne reveals the power and identity of these great terroirs.

Carried by the saline freshness of the limestone, this Blanc de Blancs is a slender, straight, luminous wine, with a caressing and powdery texture, where the minerality is finely linked to the substance. It is the triumph of Chardonnays!

Freshness

Soft, creamy effervescence, ultra-fine and delicate. Precise, mineral bouquet. Ripe citrus (citron), almost vanilla-like white flowers (pollen) and harvest notes (almond, wheat). The bouquet also expresses freshness in the form of mint and iodine (sea breeze), gradually complemented by warmer nuances of smoke, hot butter and toast.

Creamy attack on the palate, both tender and concentrated. The wine unfolds intensely, supported by delicate effervescence. The sensation is one of ripe, complete and concentrated juice, carried by this incredible powdery texture with a resolutely saline finish. A few woody, smoky notes further stretch the wine, giving it that extra length and complexity that augurs well for long cellaring. The finish is pure, refreshing and salivating.

"Witnessing the soul of Champagne isn't just about cooking the terroir... it's about understanding who it is!

Having worked in the kitchens of Messrs Bordier, Grondart, Anton and Roth, and as Yannick Alléno's right-hand man at Le Scribe and then Le Meurice, he brought Domaine Les Crayères its first macaron in 2011, followed by a second in 2012, which he has kept for over 10 years.

His menu is inspired by the seasons and the Champagne region.
