perfectly integrated and deliciously elegant effervescence. The purity and perfection of the ripe yellow fruit merges with the intense chalky freshness typical of Cristal, both powdery and saline.

The mid-palate is dense, juicy, concentrated and elongated, thanks to the seductive, spicy structure of partial aging in oak foudres.

The finish builds to a crescendo, revealing a full texture of grain and velvet, wrapped in a long, saline, sublimely elegant finish.

Terroirs

The year 2014 A three-beat climatic waltz, with sharp, sharp, sharp contrasts! A magnificent, dry spring ending with a scorching June; a cool, rainy autumn; a hot, sunny and very dry September... worthy of an August. The key to this vintage lies in both the soils and the work of Champagne's winegrowers: the chalky soils in the lower parts of the slopes, which drain better, helped to evacuate excess summer water and limit excessive vigour... will be revealed by our increasingly virtuous viticultural practices, enabling us to go even further in our quest for grape balance and ripeness.

"Witnessing the soul of Champagne isn't just about cooking the terroir... it's about understanding who it is!

Having worked in the kitchens of Messrs Bordier, Grondart, Anton and Roth, and as Yannick Alléno's right-hand man at Le Scribe and then Le Meurice, he brought Domaine Les Crayères its first macaron in 2011, followed by a second in 2012, which he has kept for over 10 years.

His menu is inspired by the seasons and the Champagne region.
