Cristal 2016 is distinguished by its brilliant yellow color and fine, slow effervescence. Its intense bouquet blends scents of white flowers, roasted citrus and ripe yellow fruit, with iodine and roasted nuances after a few minutes, testifying to yeast autolysis. On the palate, it offers immediate sweetness, a caressing texture, and ripe, juicy fruit flavors characteristic of 2016 Pinot Noirs. The effervescence is perfectly integrated, with saline and iodine notes, and a delicately powdery, chocolatey texture. The balance between crispness, salinity and a long, crystalline finish evokes purity and finesse, reminiscent of the 2002, 2008 and 2012 vintages, but with more precision and concentration.

The year 2016 was characterized by a particularly pronounced climatic swing: after a cool, wet, rather late spring, the summer was dry and hot, marked by a heatwave at the end of August and a dry, sunny harvest period that ensured the grapes ripened beautifully. These dry, bright conditions benefited the canicular Pinots Noirs, whose ripeness revealed an intense fruity character and silky texture. The Chardonnays are not to be outdone, with a more classic, chiselled and saline allure.

Having worked in the kitchens of Messrs Bordier, Grondart, Anton and Roth, and as Yannick Alléno's right-hand man at Le Scribe and then Le Meurice, he brought Domaine Les Crayères its first macaron in 2011, followed by a second in 2012, which he has kept for over 10 years.
His menu is inspired by the seasons and the Champagne region.
