the structure of this Champagne
Deep yellow color with golden, slightly amber highlights. Dynamic, intense effervescence.
Intense Pinot noir bouquet combining tart red fruit (redcurrant) and juicy, sun-drenched yellow fruit (mirabelle plum, vine peach). On aeration, the traditional aromas of "La Montagne" Pinot noir emerge: dried, smoky fruit, combined with a hint of acidity and spice (white pepper).
The attack on the palate is dynamic, concentrated and powerful. The texture is fleshy and vinous, with an acidic presence that clearly integrates concentrated juice and freshness. The structure is tonic, chiselled, almost classic and firm. The fruitiness gradually gives way to the sweetness of chocolate notes (cocoa bean) and even a slight roasting. The finish reveals concentrated, roasted and candied fruit, supported by saline, salivating flavors. The final sensation is beautifully unbound, generous and graceful.

An extraordinary vintage that also saw Champagne recognized as a UNESCO World Heritage Site! 2015 fit in perfectly with the continental trend of the decade: mild, wet winters and hot, dry summers! The hot, sunny summer was marked by record-breaking heat and drought... And by the happy summer finale, when the vines were "relieved" by the life-saving rain in the second half of August. Thanks to this fresh finish, the ripening process produced juicy, ripe, concentrated grapes! The ambition of the vintage? To capture the concentrated signature of a spectacular vintage!

"Witnessing the soul of Champagne isn't just about cooking the terroir... it's about understanding who it is!
Having worked in the kitchens of Messrs Bordier, Grondart, Anton and Roth, and as Yannick Alléno's right-hand man at Le Scribe and then Le Meurice, he brought Domaine Les Crayères its first macaron in 2011, followed by a second in 2012, which he has kept for over 10 years.
His menu is inspired by the seasons and the Champagne region.
