Dom Pérignon champagne owes its name to the famous monk and procurator of Hautvillers Abbey in 1668, Pierre Pérignon, known as Dom Pérignon. According to legend, Pierre Pérignon is said to have discovered what is now known as the Champagne method. As an aside, he taught this method in 1669 to the Benedictine monk Thierry Ruinart, enabling Ruinart to become, historically, the first Champagne house in 1729. On 1 January 2019, Vincent Chaperon succeeded Richard Geoffroy as Cellar Master at Dom Pérignon.

The vintage

Dom Pérignon’s Rosé Vintage Coffret Gold 2000 comes from a unique vintage. The year 2000 was hot, with below-average temperatures in July and a humid climate. The harvested Chardonnay grapes were supple, full-bodied and complex. As for the Pinot Noir, it was well-structured and had a lovely length on the palate.

Colour
The colour is deep with a lovely amber hue.

Nose
The initial nose is very floral, giving way to notes of cherry and candied lemon with cocoa and a hint of smokiness, all combining to create a lovely aromatic complexity.

Palate
On the palate, the wine is structured and classic, with a sense of balance and lovely lingering aromas. This champagne surprises with its fresh, vibrant fruitiness and a subtle hint of bitterness. This superb champagne is presented in extremely luxurious packaging, featuring petals set in rose gold using traditional French goldsmithing techniques. It is a true rarity, with only 50 bottles in existence.

Wine Advocate – Parker:
The 2000 Dom Pérignon Rosé is a flamboyant, ripe Champagne that screams Pinot to a degree I have never encountered in any other vintage of this wine. A dark, intense colour gives way to a Chambolle-like nose, followed by endless red berries, flowers and spices, all underpinned by plenty of power, richness and density. The wine continues to blossom on the palate, with utterly beguiling detail, clarity and polish, all qualities that resonate on the rich, expansive finish. The 2000 Dom Pérignon Rosé is 45 per cent Chardonnay and 55 per cent Pinot Noir, of which 25 per cent is still Pinot. Geoffroy says his aim was to make a statement with the 2000 Dom Pérignon Rosé; he has done just that – and so much more. In fact, the 2000 appears to signal a stylistic shift towards a more substantial, serious style of rosé. This superb wine is not to be missed, but readers should note that this is no light-hearted rosé; rather, it is a Champagne that demands serious attention. The 2000 will test the limits of what readers expect from a Dom Pérignon Rosé, but the wine is simply marvellous. I loved it. This bottle was disgorged in 2008. Anticipated maturity: 2010–2025.
