The Pureté Brut Nature, with no dosage, pairs naturally with sashimi and raw fish tartares.L’Empreinte, a full-bodied and structured blanc de noirs, calls for roast poultry, wild mushrooms or sweetbreads. La Volupté, a taut and lemony blanc de blancs, excels with grilled langoustines and scallops. The Rosé de Saignée, produced through extended maceration — a more intense method than blending — pairs beautifully with duck breast with cherries or strawberries for dessert.
Serve all Geoffroy champagnes at between 8 and 10 °C in a generous-sized glass to reveal their natural freshness.L’Empreinte and the single-vineyard cuvées — Les Collinardins, Les Tiersaudes, Les Houtrants complanté — benefit from being decanted for twenty minutes. Stored in a cool cellar at 12–14 °C, away from light, these cuvées will keep for five to ten years without losing their brilliance.
