Blanc de blancs are mainly produced in the Côte des Blancs, south of Epernay, over a distance of about 20 kilometers, notably in the communes of Cramant, Le Mesnil-sur-Oger, Avize and Oger, which are renowned for the quality of their limestone terroir.

Blanc de Blancs, or Blanc de Blanc, is a champagne made exclusively from white grapes. The name derives from the light color of the grapes used to make the champagne, which are generally chardonnay. As they age, they take on golden hues. Other grape varieties used in theproduction of Champagne may also be eligible for the "blanc de blancs" appellation, provided that the blend is exclusively made from white grape varieties: these include Petit Meslier, Arbane and Pinot Blanc, which are also authorized by the AOC Champagne specifications.

The term "blanc de blancs" can be used for other sparkling wines with the same characteristics as champagne. Blanc de noirs, on the other hand, refers to a white champagne made exclusively from black grapes. In Champagne, pinot noir and pinot meunier or both are used in blends.

A latecomer to Champagne, Blanc de Blancs is renowned for its finesse and elegance. Charles Heidsieck was among the first Champagne Houses to introduce a vintage Blanc de Blancs in 1906, reflecting their passion for Chardonnay. They were also the first to offer a Brut Sans Année Blanc de Blancs from the 1949 harvest. Prior to the 20th century, champagne houses were reluctant to produce 100% Chardonnay sparkling wines due to the poor reputation of Côte des Blancs wines. However, after the Second World War, Blancs de Blancs champagnes gradually gained in popularity among the major Houses. Today, most renowned champagne brands offer a Blanc de Blancs cuvée, and some have even made this style of champagne their specialty.

In fact, some of these Houses have made this style of champagne their specialty, offering very high-end cuvées. Examples include Taittinger with its Cuvée Comte de Champagne, Ruinart with its Cuvée Ruinart Blanc de Blancs, and Krug with its exceptional Cuvée Clos du Mesnil.

It doesn't overwhelm the taste buds, leaving a sensation of freshness on the palate for the rest of the meal. This champagne goes well with seafood starters, such as fish rillettes, shrimp verrine and tuna sashimi. When unsweetened or lightly sweetened, Blanc de Blancs Champagne accompanies fine, iodized dishes such as oysters or a seafood platter, highlighting the freshness of the cuvée.
