The structure of this champagne
TASTING NOTES
A luminous quartz-pink robe with strikingly intense copper highlights. On the nose, a sophisticated palette of white blossom, fresh cherry, lychee and gentle spices — ginger, Espelette pepper, a whisper of paprika. On the palate, the chalky tension of the Chardonnay enters into dialogue with the silky roundness of the Pinot Noir, culminating in a long, persistent mineral finish of exceptional complexity.
The composition

Terroirs
A blend of 12 Champagne crus, including 8 Grands Crus and 3 Premiers Crus, drawn exclusively from the cuvée (first pressing). The Chardonnay originates from the Côte des Blancs (Mesnil-sur-Oger, Avize, Oger, Chouilly); the rosé hue is achieved through the addition of a red wine made from Pinot Noir sourced from Les Riceys, in the Aube.
About this house
Rare Champagne is the prestige cuvée of Piper-Heidsieck, the historic house founded in Reims in 1785. Produced only in exceptional vintages, it represents the fullest expression of this great Champagne house's savoir-faire.
The Rosé Millésimé 2012 aged for over a decade on lees before disgorgement — a remarkably rare patience that endows the wine with extraordinary complexity and depth. The bottle, conceived as a work of contemporary art in homage to Mondrian, embodies the union of artistic creativity and Champenois excellence.
The perfect pairing
Apéritif
Its fine effervescence and spiced notes come into their own alongside golden gougères — a classic and generous pairing.
Starter
The unctuous richness of foie gras finds a perfect counterpoint in the cutting minerality and freshness of this vintage rosé.
Main course
The gentle spicing of duck magret resonates beautifully with the champagne's notes of ginger and Espelette pepper, for a pairing of rare coherence.
