The Gonet Sulcova range covers the full spectrum of Champagne styles, demonstrating remarkable consistency in terms of terroir. The Brut Réserve (60% Pinot Noir, 40% Chardonnay), which is fruity and lively with citrus notes, is ideal as an aperitif or with high-quality charcuterie. The Blanc de Blancs Brut, made from 100 per cent Chardonnay from the Côte des Blancs, pairs perfectly with oysters, langoustines or sea bass tartare. The Cuvée Montgueux (100% Chardonnay from clay-limestone soils), with notes of pineapple and mango, perfectly complements poultry in a lemon sauce or pan-fried scallops. The Cuvée Sladka demi-sec, with its rounded character, pairs well with a fruit-based dessert or pan-fried foie gras. The Rosé Dry and the Cuvée Sakura Rosé Extra Brut, with their elegant red berry notes, complement semi-cured salmon or duck breast. At the very top of the range, the non-dosé Grand Cru Extra Brut and the Cuvée Gaïa Grand Cru Extra Brut, aged in oak barrels — full-bodied, complex, gourmet — reveal their full depth when paired with truffled Bresse poultry, sweetbreads or hard cheeses.
Served at between 8 and 10 °C in a narrow tulip-shaped glass that preserves the Chardonnay’s finesse, these cuvées are at their best when enjoyed with a meal. Non-vintage bruts should be consumed within 3 years of purchase. The Millésime Grand Cru and the Gaïa can be cellared for 5 to 10 years in a cool cellar — stored horizontally, away from light and vibrations.
