The Maurice Choppin range comprises nine cuvées, all Extra Brut. *L’Âge et la Raison* (€52), a blend of Meunier, Pinot Noir and Chardonnay, is ideal as an aperitif or with roast poultry. Les Arpents (€51) is ideal with oysters and shellfish. Les Mi-Côtes (€45), a vintage wine aged in oak barrels, pairs well with mature cheeses and meat dishes served in sauce. The single-vineyard wines showcase each terroir: L’Épinette de Champagne (100% Chardonnay) with fine seafood, Les Bas Ruisselets (100% Pinot Noir) with pink-fleshed white meats, and Les Terres des Reguins (100% Pinot Meunier) with spicy or umami-rich dishes.
These champagnes are best served between 8 and 10 °C, ideally in a tulip glass or an open-bowled white wine glass to reveal their aromatic complexity. The blended cuvées are best enjoyed within three to five years; the vintage champagnes — Les Mi-Côtes, La Denrée de l’Âne — offer ageing potential of five to ten years in a cool cellar.
