Ayala cuvées — Precision, low dosage, purity

The Ayala range is centred around four signature cuvées. The Brut Majeur, a blend dominated by Chardonnay, pairs beautifully with aperitifs, oysters and shellfish. The Rosé Majeur, elegant and fruity, goes well with roast poultry or salmon tartare. The Brut Nature, with no added sugar, brings out the best in sashimi and fresh soft-textured cheeses. The Blanc de Blancs A/19, a vintage Chardonnay, comes into its own with lobster, pan-fried scallops or a mature Comté.

Serve Ayala at between 8 and 10 °C in a tulip-shaped glass to preserve the delicacy of the aromas. The Brut Majeur improves with two to three years’ cellaring in a cool cellar; the vintage Blanc de Blancs A/19 can be cellared for even longer, revealing over time the buttery and toasty notes characteristic of great Champagne Chardonnays.

Ayala — A historic house with an independent spirit in Aÿ

The House was founded in 1860 in Aÿ, a Grand Cru village in the heart of Champagne. As early as 1882, it was counted amongst the founding members of the Syndicat des Grandes Marques, a testament to its status amongst the Champagne elite. In 1908, the British Crown granted it a Royal Warrant. In 2005, the Bollinger family acquired Ayala, ensuring its long-term stability whilst preserving its unique stylistic identity.

Ayala’s signature style is based on a philosophy of low dosage and bespoke blends, drawing on an extensive library of reserve wines. Extended ageing on slats refines the texture of the bubbles and the aromatic complexity. The constant aim is to reveal the minerality of Champagne’s chalky soils without ever masking the fruit with excessive residual sugar.
