No winegrower in the family, no vineyard inheritance: Guillaume Bonvalet founded his house in 2012 and released his first bottles in 2014. Joined in 2017 by his wife Pauline, he settled in Pierry, near Épernay, in a building the couple had built, overlooking the hillsides. The house selects its grapes plot by plot, from vineyards farmed under HVE and Viticulture Durable en Champagne certification. On Pépites en Champagne, you will find three of its cuvées: Épopée, Brut Suprême and Amas Stellaire.

Épopée is the house's first cuvée, released in 2014. It blends the three Champagne grape varieties, 45% meunier, 30% chardonnay and 25% pinot noir, and ages for 4 years in the cellar. Fresh, with notes of pear and elderflower, it was awarded a gold medal at the Gilbert & Gaillard International Challenge 2023. The Brut Suprême, made with 70% pinot noir, returned to the collection in 2023 in an Extra-Brut version: light and mineral, with notes of green apple and blackberry, it scored 87/100 in the Gault&Millau 2026.
Amas Stellaire stands apart. Half chardonnay, half meunier from Pierry, it is the first cuvée the house vinifies in oak barrels, Meursault barrels purchased in 2023. Dosed at just 2 g/L, it offers a full-bodied palate, with notes of butter and toasted brioche. The house offers it on an allocation basis.
Originally from the Oise region, Guillaume Bonvalet arrived in Reims as a teenager and decided that he would one day create his own house. With no ties to the vineyards, he spent his summers working for négociants, between palletising, tirage and disgorgement, before becoming a sales representative for major houses such as Taittinger and Laurent-Perrier. In 2012, he launched his own champagne at a winegrower's estate, borrowing his cellars. His first bottles came out in 2014, which he sold and delivered himself: his office was his car.
Pauline, his wife, left her native Belgium in 2017 to join him. Volumes had outgrown the winegrower's premises, so the couple decided to become négociant-manipulant and had a building constructed in Pierry capable of producing 200,000 bottles, where they settled at the end of 2021. There, the house vinifies grapes selected plot by plot, in Bisseuil, Saulcy, Ambonnay, Grauves, Pierry and on the hillsides of Épernay. Its motto comes from Jacques Cœur: “To a valiant heart, nothing is impossible.”
