A BLANC DE BLANCS OR A BRUT FOR THE APERITIF!
The most festive way to welcome your guests is to open a bottle of champagneas an aperitif! Choose traditional champagne, a little lively and not too sweet(Brut Nature or Extra Brut) toawaken your taste buds. We recommend that you accompany your aperitif with foie gras or salmon. A blanc de blancs, 100% chardonnay, is a sure bet for aperitifs...
Their fine, light texture makes them ideal aperitif companions, refreshing the taste buds without weighing them down. Blancs de Blancs are renowned for their refinement and elegance. A refined, fresh, low-sugar champagne that blends perfectly with the aromatic flavors of the aperitif. As a result, it is particularly suited to fresh starters based on raw fish, shrimps or grilled shellfish.
CHAMPAGNE AS AN APERITIF OR STARTER
To awaken your taste buds, choose an extrabrut or brut naturechampagne. For starters, choose raw fish or shellfish as your main course. Other options include sushi and sashimi, fish terrines and smoked salmon. Choose a bright, but not too sparkling, champagne to accompany your oysters, salmon, seafood platters and sushi. Adding iodine-rich foods to champagne or brut nature combined with natural ingredients enhances the pairing. However, sugar is not compatible with this pairing.
Accompany foie gras with the acidity of a Chardonnay-basedchampagne when preparing it pan-fried. Opt for a blanc de blancs champagne with fresh, fine bubbles, such as the Blanc de Blancs from the Maison Deutz, or the cuvée Les Comtes de Champagne from the Maison Taittinger.

a rosé champagne for aperitifs!
Rosé champagnes also have their place as aperitifs, especially cuvées composed mainly of Chardonnay, for their discreet, fresh aromas and soft, silky texture, such as :

Laurent-Perrier Cuvée Rosé has established itself worldwide as the benchmark for rosé champagnes. It goes perfectly with raw fish, grilled prawns, fine charcuterie, duck and lamb dishes. It is also an extraordinary partner for canapés as an aperitif. The more daring will marry it with Asian or Indian cuisine in bite-size portions. Also available in its metal butterfly box.

Cuvée AS Brut Rosé from Armand de Brignac is a bold, romantic and contemporary champagne. Fresh, structured and gourmet, it's ideal with duck with Morello cherries, salmon tartar with Grapefruit and Avocado in pretty verrines. This is a high-precision Champagne Rosé, generous and precise, which will also sublimate the Japanese flavors of a fruity sushi with mango and coconut cream.
