About this house
Founded in 1860 by Edmond de Ayala — a pioneer of low dosage at a time when Champagnes were typically high in sugar — Maison Ayala has embodied from the outset a pure, precise, resolutely chardonnay-driven style. Acquired by Bollinger in 2005, the house has carefully preserved its singular identity under the stewardship of cellar master Caroline Latrive.
Based in Aÿ, in the heart of the Marne, Ayala champions a philosophy of respect for the fruit and stainless-steel vinification, safeguarding primary aromas. Its focused portfolio of signature cuvées reflects a clear conviction: quality over quantity.
