THE CUVÉES OF MAISON CHARLES HEIDSIECK
Pale gold in colour with glints of luminous green, threaded with a fine, persistent mousse. On the nose, a bouquet of candied citrus — yuzu, grapefruit, preserved lemon — gives way to white blossom, buttered brioche and smoked chalk. The palate is at once supple and taut, revealing ripe pear, preserved lemon and a saline minerality that stretches into a long, chalky finish.

A blend of five crus from the Côte des Blancs — Avize, Cramant, Oger and Le Mesnil-sur-Oger (four Grands Crus) complemented by Vertus (Premier Cru) — aged for more than ten years on lees in the house's Gallo-Roman chalk cellars in Reims.
Founded in 1851 by Charles-Camille Heidsieck — the legendary "Champagne Charlie" who conquered America glass in hand — the house has built its identity on the art of slow ageing. Its historic chalk cellars, listed as a Monument Historique and dating from the Gallo-Roman era, provide a perfectly stable temperature for maturing wines over time.
Le Blanc des Millénaires, created in 1981, is produced only in exceptional vintages. Under the stewardship of cellar master Thierry Roset, the cuvée remains the most accomplished expression of Champagne Chardonnay: five elite terroirs, more than a decade on lees, and technical mastery in the sole service of the "Typiquement Charles" style.
L'iode et la minéralité de ce blanc de blancs s'accordent avec une élégance naturelle aux huîtres de claire, dont le sel répond à la tension saline du vin.
La texture crémeuse et l'acidité ciselée du vin épousent la douceur iodée du homard, relevée d'un beurre aux herbes fines.
La sole meunière, délicate et beurrée, trouve dans ce champagne un miroir parfait : minéralité contre minéralité, rondeur contre rondeur.
