Aromatic profile

The structure of this champagne

Four dimensions to capture its balance
Freshness
Fine, persistent bubbles and citrus tension driven by spontaneous fermentation without exogenous yeasts.
Roundness
Lees ageing imparts a measured creaminess without weighing down the mineral expression.
Body
Medium intensity, led by a direct minerality rather than aromatic power.
Length
A saline, floral finish of fine persistence, true to the clay-limestone soils of Venteuil.

TASTING NOTES

Pale gold robe with green highlights, fine and persistent mousse. On the nose, immediate minerality, white flowers, lemon, and a hint of brioche inherited from lees ageing. On the palate, the attack is fresh and precise; the dominant Pinot Meunier delivers its rounded, velvety fruitiness before a long, saline finish evokes the hillsides of Venteuil.

Terroirs

Vines on the clay-limestone slopes of Venteuil (Vallée de la Marne, right bank), south-facing. The Pinot Meunier-dominant encépagement captures the very essence of this Marne terroir, expressed without artifice through a non-interventionist approach — spontaneous fermentation, natural clarification.

Mignon-Boulard

About this house

Founded in 1911 by Louis Mignon and his wife Louise, Maison Mignon-Boulard is today run by Cyril Mignon and Estelle Boulard, custodians of a century-old savoir-faire at the Hameau de Tincourt in Venteuil. Their vineyards stretch across the south-facing slopes of the Marne, planted with Pinot Meunier, Pinot Noir, Chardonnay, and a rare parcel of Petit Meslier.

Committed to a reasoned viticulture — ploughing, cover cropping, organic fertilisation — the Mignon-Boulards practise natural winemaking: spontaneous fermentations without exogenous yeasts, lees ageing, natural clarification. Members of the Vignerons Indépendants de Champagne, they craft cuvées in which every drop reflects the singular terroir of Venteuil.
