Aromatic profile

The structure of this champagne

Four dimensions to capture its balance
Freshness
The Extra-Brut dosage of 5.5 g/L and the selection of chalky crus lend a chiselled tension and a pronounced salinity.
Roundness
Partial fermentation in oak barrels and the perpetual reserves contribute an enveloping texture without any hint of excess sweetness.
Power
The dominant Pinot Noir (45%) gives the cuvée its structure and imparts a distinctly vinous backbone.
Length
The depth of the perpetual reserves built since 1985 translates into a remarkable aromatic persistence on the finish.

TASTING NOTES

Pale golden robe with green highlights, shot through with fine, persistent bubbles. On the nose, fresh citrus (lemon, grapefruit), green apple and a gentle brioche note, lifted by toasted hazelnut from partial oak ageing. On the palate, the attack is precise and taut, underpinned by a saline minerality, before opening into ripe white fruits and a long, zesty finish.

Terroirs

A blend of more than 30 crus drawn from Champagne's finest terroirs — Montagne de Reims, Côte des Blancs, Grande Vallée de la Marne — complemented by perpetual reserve wines spanning twenty-five successive vintages since 1985, representing up to 50% of the cuvée, with 20% of the wine vinified in oak barrels.

Bruno Paillard

About this house

Founded in 1981 by Bruno Paillard at just 27 years of age — having sold his own car to purchase his first grapes — the house is the last great Champagne maison to have been created by a Champenois. Independent and family-owned, it is today led by his daughter Alice Paillard, who upholds a rigorous philosophy of transparency and respect for terroir.

An absolute pioneer of Extra-Brut, Bruno Paillard was the first in Champagne to print the disgorgement date on every bottle from 1983 — a gesture of exacting standards that has since become his signature. Minimal dosage, perpetual reserves and extended lees ageing are the three pillars of a house that has made precision an art de vivre.

Food pairing

The perfect pairing

Between the champagne and its dish
Apéritif

Apéritif

The Extra-Brut vivacity and toasted hazelnut notes pair superbly with warm cheese gougères — a classic Champenois pairing par excellence.

Starter

The saline tension and chiselled minerality of the cuvée are a natural foil for briny oysters, whose marine character echoes the champagne's citrus zest.

Main course

Main course

The elegance of the Pinot Noir and the cuvée's freshness make a graceful match for sole meunière, a time-honoured Champenois pairing.
