TASTING NOTES

Golden robe with amber highlights, animated by a fine and persistent bead. An elegant, unfolding nose, led by white flowers — orange blossom, hawthorn, delicate acacia — then citrus, with drifts of saffron and cedar. The palate is broad and creamy, carried by candied red and black fruits, honey and dried fruits, drawn out by a chalky tension that defines the long finish.

Terroirs

A blend of more than 30 crus from Champagne, with 20% of the wines having undergone their first fermentation in oak casks for added texture. Reserve wines kept without interruption since 1985 lend the cuvée a depth and complexity that the year's wines alone could never achieve.

Bruno Paillard

About this house

Bruno Paillard founded his house in 1981, the first négociant-manipulant to be established in Champagne for several decades, born of a lineage of Reims wine brokers. From the outset, he introduced two rare signatures for the region: the disgorgement date printed on every bottle, and a resolutely Extra Brut style — a refusal of added sugar, letting only the wine speak.

The house remains entirely independent and family-owned, led alongside Alice Paillard since 2012. Patience is a founding value here: where Champagne regulations require just 15 months on lees for a non-vintage, Bruno Paillard never accepts fewer than 36 — and 72 months for this eponymous cuvée.

Food pairing

The perfect pairing

Light, melting gougères pair beautifully with the cuvée's creamy texture and floral notes.

Starter

Citrus-cured gravlax with fresh herbs echoes the nose's bright citrus character, while the richness of the salmon balances the Extra Brut tension.

Main

Main

The cuvée's tertiary complexity — spice, subtle oak — finds a delicate partner in morel mushrooms, while the creaminess of a risotto softens its lively acidity.
