The palate opens with an ample, creamy attack, the structure at once elegant and tautly defined, with an exceptional length that reveals the full majesty of an extraordinary vintage.

A Grand Cru blend led by Chardonnay from the Côte des Blancs, rounded out with 10% Pinot Noir to lend structure and density. The 2002 vintage — unanimously acclaimed by the trade — benefited from a succession of warm days and cool nights, ensuring a slow ripening and a sugar-to-acid balance rarely achieved.
Founded in 2011 by Alexandre Méa after four years of research and development, Champagne Carbon was born of a bold conviction: to wed the most exacting Champenois tradition with a pioneering technology — genuine carbon fibre casing. Each bottle becomes an exceptional object, shielding the wine from light whilst asserting a resolutely contemporary aesthetic.
Across its 15 hectares, the house ages its champagnes in traditional oak barrels, riddled and tended daily by a single cellar master. It is in this spirit of high-precision craftsmanship that Carbon sealed, in 2018, an official partnership with Bugatti in Molsheim — two houses united by the same passion for absolute perfection.
The mineral finesse of the Grand Cru Chardonnay is magnified alongside warm gougères, whose melted cheese responds with elegance to the champagne's creamy roundness.
The richness and complexity of this exceptional vintage meet their match in the velvety texture and intensity of foie gras.
The nobility of roasted lobster tail with beurre noisette answers beautifully to the fullness and length of this champagne, aged more than 15 years on the lees.
