The palate is intense and precise, driven by a assertive acidity — the hallmark of a wine that has foregone malolactic fermentation — which the chardonnay refines into a long, saline and zesty finish.

Sourced from parcels in Noé-les-Mallets, Fontette and Ville-sur-Arce in the Côte des Bar (Aube), on Kimmeridgian clay soils where pinot noir expresses both flesh and minerality. The exclusive selection of vintaged years, with no recourse to reserve wines, lends this cuvée a complexity and millésimal coherence that is rare in the non-vintage category.
Founded in 1950 in Noé-les-Mallets at the heart of the Côte des Bar, the Cordeuil house is today led by Erlande Cordeuil, the third generation who took over the family domaine in 2017. Across 5 hectares fully certified Organic since 2019, the winemaker tends her pinot noir and chardonnay with scrupulous respect for the Aubois soils.
The Cordeuil signature rests on two demanding convictions: extended ageing in the cellar — averaging ten years on the lees — and a steadfast refusal of malolactic fermentation. This philosophy allows the Kimmeridgian terroir to express itself fully, with minimal added liqueur and an intact natural character, recognised by the Guide Hachette des Vins.
Its fine bubble and crisp acidity awaken the palate at the start of a meal, in perfect harmony with the light, flaky quality of gougères.
The citrus notes and vivacity of the cuvée marry beautifully with the rich, delicate flesh of raw salmon.
The structure of the pinot noir and the evolved complexity of the cuvée respond to the gentle spices and yielding flesh of duck magret.
