TASTING NOTES
Pale gold in the glass with faint green highlights, fine and persistent bubbles. The nose is delicate and precise, offering fresh citrus, white blossom and damp chalk, with a brioche note from extended lees ageing. The palate is taut and finely drawn, balancing lively citrus acidity with a discreet creamy roundness, finishing with saline elegance.
The composition

Terroirs
A blend of 70 crus drawn from Champagne's six great terroir zones, with each plot and each variety vinified separately in stainless steel to preserve the purity of primary aromas. Chardonnay, the backbone of the house, enters into dialogue here with Pinots from the Montagne de Reims to lend structure and depth.
About this house
Founded in 1860 in Aÿ, Champagne Ayala established itself as one of the rare grandes maisons to build its identity around Chardonnay, at a time when Pinot Noir held absolute sway. Acquired by the Bollinger group in 2005, it has retained a deliberately intimate production and an uncompromising artisanal standard.
Its signature style rests on absolute purity: restrained dosage, stainless-steel vinification to preserve varietal freshness, and rigorous selection across 70 crus. Far removed from ostentatious grandeur, Ayala embodies a quiet elegance that appeals to lovers of precision and minerality.
The perfect pairing
Aperitif
Its vivacity and finesse make it an ideal aperitif Champagne, shown to brilliant effect alongside warm, melting cheese gougères.
Starter
The citrus tension and minerality of the Brut Majeur beautifully complement the delicate brininess of a sea bass carpaccio.
Main course
The interplay of freshness and creamy roundness responds admirably to the gentle vegetal sweetness and silky texture of a green asparagus risotto.
