TASTING NOTES

A deep golden robe with amber glints, the bead fine and aristocratically persistent. On the nose, an explosion of candied citrus, mango and roasted coffee mingles with gentle spice and notes of baklava — the unmistakable signature of the second Plénitude. On the palate, the wine is broad yet taut, with a delicate gastronomic bitterness and a chalky minerality that underpins an exceptionally long, smoky and unforgettable finish.

Terroirs

A blend of Grands and Premiers Crus from Champagne harvested in 2006, a sun-drenched and generous vintage synonymous with perfect aromatic maturity. Fourteen years of ageing on the lees transfigure the cuvée into a second state of fullness — one utterly inaccessible in the wine's early years.

Dom Pérignon

About this house

Dom Pérignon, founded in the spirit of Benedictine monk Pierre Pérignon (1638–1715), has embodied the very essence of vintage Champagne since 1921. Owned by LVMH and crafted in Épernay, the house produces but a single wine: the Vintage — never declared unless it is deemed perfect, with certain years simply set aside rather than released.

The concept of the Plénitudes — P1, P2, P3 — is the house's intellectual hallmark: each cuvée passes through successive states of harmony as it evolves over time. The P2 is disgorged after approximately 14 years on the lees, the precise moment at which the wine attains a depth and complexity that only time can reveal.

Food pairing

The perfect pairing

Between the champagne and its dish
Aperitif

Aperitif

The golden richness of the P2, with its notes of honey and roasted coffee, reaches full splendour alongside a mi-cuit foie gras with citrus.

Starter

The chalky minerality and citrus tension of the Champagne elegantly elevate the briny sweetness of butter-roasted lobster.

Main course

Main course

The smoky depth and earthy notes of the P2 resonate beautifully with a Bresse chicken with truffles pressed beneath the skin.
