TASTING NOTES

A golden robe with green highlights and fine, remarkably persistent bubbles. The nose reveals a striking complexity: warm brioche, candied citrus, acacia blossom and mineral chalk. On the palate, tension and fullness achieve a perfect balance, carried through to a long, saline finish with notes of dried fruits and gentle spice.

Terroirs

A blend of carefully selected vines from the Montagne de Reims and the Côte des Blancs, the 2008 vintage owes its signature to cool nights that preserved an exceptional natural acidity, making this year one of the greatest of the decade in Champagne.

Dom Pérignon

About this house

Founded within the abbey of Hautvillers in the 17th century, Dom Pérignon has embodied the archetype of prestige champagne for nearly three centuries. A property of the LVMH group, the house produces but a single vintage cuvée, deliberately declining to declare any year that falls short of its absolute standards of excellence.

Each vintage is aged for several years in the cellars before being released at its peak, then offered at different stages of maturity — P1, P2, P3 — according to the concept of Plénitudes. Under the stewardship of Richard Geoffroy for nearly thirty years, and since 2019 of Vincent Chaperon, the house upholds a philosophy founded upon the complete harmony of the wine.

The quintessential classic pairing: the sweet brininess of lobster resonates beautifully with the saline tension and aromatic power of this vintage.

Main course

Main course

The earthy depth of truffles finds in this vintage an exceptional partner, their shared flavours mutually enhancing one another's length on the palate.
