Terroirs
A blend of 24 exceptional crus drawn from multiple vintages, in which Chardonnay from the Côte des Blancs terroirs asserts its freshness and minerality. The red wine component comes exclusively from Pinot Noir sourced in Aÿ, a Grand Cru renowned for the generosity and depth of its fruit.
About this house
Founded in 1860 in Aÿ, Maison Ayala was a pioneer in the art of low dosage as far back as the nineteenth century, long before such a philosophy became fashionable. Today a member of the Bollinger group, the house cultivates a refined and precise style centred on purity of fruit and minerality.
Under the guidance of cellar master Caroline Latrive, Ayala practises a minimalist approach to winemaking: respect for the grape, minimal use of additives, and complex assemblages drawn from multiple crus and vintages. Chardonnay plays a central role — the hallmark of a house that favours freshness and elegance over power.
