THE CUVÉES OF MAISON BILLECART-SALMON
A rosé robe of copper and salmon hues, with a beautiful luminous intensity. The nose, of great elegance, reveals aromas of ripe plum, vine peach, rose petals, and a touch of gentle spice and marzipan. On the palate, the texture is ample and silky — medium-full body, precise and fresh acidity, with a saline finish of remarkable persistence.

A blend of Pinot Noir from the terroirs of Mareuil-sur-Aÿ and Aÿ (55%) and Grand Cru Chardonnay from the Côte des Blancs (45%), enriched with 10% Pinot Noir red wine for depth of colour and aromatic expression. Vinified entirely in stainless-steel vats, aged on lees for eleven years, disgorged in July 2021.
Founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and his wife Élisabeth Salmon, Billecart-Salmon is one of the rare grandes maisons of Champagne to have remained independent and family-owned across seven generations. The house is renowned for its meticulous precision in winemaking — long, low-temperature fermentations and natural cold clarification — which imparts an unmistakable finesse and freshness to its cuvées.
Cuvée Elisabeth Salmon is the house's flagship, a heartfelt tribute to its founder. Produced only in vintage form during exceptional years, it ages for more than a decade before disgorgement. The 2009 vintage, awarded 96/100 by the Wine Advocate, is universally acclaimed as one of the greatest in the cuvée's history.
Its fine bubbles and golden-fruit aromas pair beautifully with the buttery lightness of gougères.
The cuvée's silky texture and precise acidity bring out the delicate, briny sweetness of lobster.
The gentle spice and generosity of the 2009 Pinot Noir answer perfectly to the bold character of duck breast.
