Founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and Élisabeth Salmon, the house is one of the rare great Champagne maisons to remain both independent and family-owned — now in its seventh generation. Its signature style rests on low-temperature fermentation, meticulous work with acidity, and a philosophy resolutely oriented towards finesse over power.

The Brut Réserve — renamed « Le Réserve » — is the house's flagship cuvée, crafted to an assemblage philosophy unchanged since 1945. Aged for nearly 50 months on lees in the deep cellars of Mareuil-sur-Aÿ, it embodies the consistency and elegance that have earned Billecart-Salmon worldwide recognition. In magnum, the slower, more homogeneous ageing amplifies its complexity and freshness.
