TASTING NOTES
The robe presents a deep golden hue with burnished highlights, animated by a fine and persistent bead. On the nose, complex elegance unfolds through candied apricot, white blossom, linden honey and subtle vanilla notes drawn from barrel ageing. On the palate, the generous amplitude of Pinot Noir enters into dialogue with the saline vivacity of Chardonnay, culminating in a long, lightly spiced finish of remarkable persistence.
The composition

Terroirs
An exclusive blend of Grands and Premiers Crus: 60% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, 40% Chardonnay from the Côte des Blancs, of which 10% is vinified in traditional oak barrels for a measured, well-integrated amplitude.
About this house
Founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and his brother-in-law Louis Salmon, the house remains one of the rare great Champagne maisons still in independent hands — with the seventh generation now at the helm. Its style, resolutely focused on elegance and precision of winemaking, has earned it an enduring worldwide reputation.
The Cuvée Nicolas François, launched in 1964 in homage to the founder, is the house's flagship. Assembled from Grands and Premiers Crus, partially aged in oak barrels and cellared for over ten years on the lees, it embodies the Billecart-Salmon vision: a gastronomic Champagne uniting depth, freshness and natural refinement.
The perfect pairing
Aperitif
Its fine bead and extra-brut tension pair superbly with warm gougères made from a well-aged cheese.
Starter
The saline minerality and vivacity of the 2012 vintage elevate a sole meunière with lemon butter to perfection.
Main Course
The amplitude of the Pinot Noir and the richness from barrel ageing pair with delicate precision alongside a pan-seared veal medallion.
