THE CUVÉES OF MAISON CAZALS
A pale robe with green-gold highlights, fine and persistent bubbles. On the nose, it opens with vivid notes of lime, hawthorn blossom and a flinty, iodine-tinged quality reminiscent of wet chalk. The palate is fresh and precise, with a weightless, filtering texture, and the mineral, faintly saline finish is an unmistakable signature of the chalk soils of the Côte des Blancs.

A blend of Grand Cru parcels from Mesnil-sur-Oger and Oger, complemented by Premier Cru fruit from Vertus and Villeneuve-Renneville — four villages on the Côte des Blancs whose Senonian chalk soils impart their distinctive minerality to the Chardonnay.
Founded in 1897 by Ernest Cazals, a cooper from the South of France who married into a Champagne vine-growing family, the house has been built generation after generation around an exceptional terroir: the heart of the Côte des Blancs, in Le Mesnil-sur-Oger. Claude Cazals, inventor of the gyropalette, left his mark on the history of Champagne viticulture before passing on the torch.
Since 1996, his daughter Delphine has been at the helm, overseeing the estate's 9 hectares of Premier and Grand Cru classified vines. She upholds a house style rooted in precision, minerality and the pure expression of Chardonnay — four generations in the service of a single grape variety, a single terroir.
Its iodine-tinged vivacity and fine mousse make it the ideal companion for an oyster tasting.
The champagne's citrus freshness responds with elegance to the delicacy of sea bass carpaccio.
The beurre noisette of a sole meunière finds its perfect counterpoint in the cutting minerality of this Blanc de Blancs.
