Aromatic profile

The structure of this champagne

Four dimensions to capture its balance
Freshness
The Extra Brut dosage of 2 g/L and indigenous yeasts preserve a lively, taut acidity — the hallmark of the clay-limestone terroirs of the Vallée de la Marne.
Roundness
The dominant Meunier, oak barrel ageing and extended maturation on lees lend a generous, velvety texture.
Body
85% Meunier from old vines delivers remarkable chew and structure, further reinforced by the reserve wines vinified under wood.
Length
The absence of filtration and a minimum of 30 months on lees considerably extend the finish, lingering on toasted and mineral notes.

TASTING NOTES

Deep golden robe with amber highlights, fine and persistent bubbles. On the nose, buttered brioche, white flowers, ripe peach and delicate hazelnut nuances inherited from oak ageing. On the palate, the attack is lively and precise, the texture creamy and generous, carried by the chewiness of the Meunier, and the finish lingers on toasted notes and a persistent chalky minerality.

Terroirs

Les Arpents blends vines planted on the clay-limestone terroirs of Damery, Saint-Martin-d'Ablois and Vinay, at the heart of the Vallée de la Marne, with a Meunier dominance that expresses the vinous, fruit-forward character of this area. The reserve wines, vinified and aged in oak barrels with indigenous yeasts, bring an unusual complexity and depth for a non-vintage champagne.

Maurice Choppin

About this house

Founded in 1712, Maison Maurice Choppin has cultivated 6.5 hectares of vines across seven generations on the sun-drenched hillsides of Damery, in the Vallée de la Marne. An independent récoltant-manipulant, HVE 3 certified since 2018, the domaine champions a reasoned viticulture that expresses the typicity and singularity of its terroirs.

Since 2012, Benjamin Choppin has both perpetuated and radicalised this legacy: full vinification in oak barrels, fermentation with natural yeasts, extended ageing on lees, with neither fining nor cold stabilisation. An uncompromising artisanal approach that places Maison Choppin among the reference vignerons of the Vallée de la Marne.

Food pairing

The perfect pairing

Between the champagne and its dish
Aperitif

Aperitif

Its fine bubbles and unfiltered Extra Brut character come into their own alongside golden gougères, where the melted cheese echoes the wine's buttery hazelnut notes.

Starter

Starter

The citrus freshness and chalky minerality of Les Arpents are a natural match for salmon gravlax, whose herbs and citrus extend the champagne's floral nose.

Main Course

Main Course

The oaky roundness and body of the Meunier pair beautifully with a morel mushroom risotto, whose earthy, umami notes answer the cuvée's toasted aromas.
